  • 185 g butter
  • 220 g panela sugar
  • 1 egg + 1 egg yolk
  • 240 g of flour
  • 1 teaspoon baking soda
  • 1 tablespoon of vanilla paste
  • 1 teaspoon fleur de sel
  • 100 g pieces of dark chocolate
  • 300 g pieces of caramel or milk chocolate

Preparation:

  • Preheat the oven to 170°C.
  • Beat the butter with the sugar until creamy and well combined.
  • Add the egg and egg yolk, stirring constantly.
  • Once the mixture is smooth, add the flour, baking soda, salt and vanilla paste.
  • Mix everything well until a uniform dough is formed.
  • Fold in the caramel or chocolate chunks (or both).
  • Put the dough in the refrigerator for 30 minutes.
  • It is then shaped into small balls of approx 50 g.
  • Bake in the oven for approx. 8 minutes.

Does the recipe need to be perfected?

  • Advice:
  • Mix in pieces of dark and milk chocolate for a balanced flavor.
  • Once the chocolate chips and drops have been added, fold in carefully.
  • The cookies are ready when the edges are slightly crispy and the center is still soft.
  • It is good to let them cool at room temperature for 12 hours to intensify the flavor.
  • Replace the butter with nut butter (beurre noisette) for a magical touch of flavor.
