Preparation To enjoy the authentic and classic flavor of matcha, the following rules must be observed when preparing the drinks. The water must not be more than 80 °C to preserve the valuable ingredients of matcha tea. Furthermore, it is not enough to simply add water and stir a little. The powder should be whisked/foamed in a little water traditionally with a matcha whisk, chasen, or modernly with an electric milk frother. In the case of the manual version, the speed and not the pressure is decisive. It is best to quickly pass over the bottom of the bowl with M or W movements.
