Goan Prawn Curry, 4 - 6 servings
Ingredients for the sauce
4 tablespoons vegetable oil, 2 medium onions, quartered, 2 tomatoes, quartered, 2 teaspoons ground paprika, 1 400ml can of coconut milk, 100g grated coconut, 4 whole red chillies, 4 teaspoons coriander seeds, 2½ teaspoons cumin seeds, ½ teaspoon ground turmeric (5 cm fresh turmeric), 2 cm (30 g) fresh ginger, peeled, 4 cloves garlic, crushed, 1 tsp whole black pepper, 1 tsp salt
400 g raw large prawns
100 g young spinach
the juice of a lemon
1 small bunch of green coriander
Mix the ingredients for the sauce. Put the ingredients in the removable bowl, put the lid on and cook for 3 hours on "High" or for 5 - 6 hours on "Low".
Just before serving, set the temperature to High and add the shrimp, spinach, lime juice and cilantro.
Mix the ingredients well, cover and cook for about 10 minutes or until the shrimp are pink and fully cooked.
Spanish chicken with chorizo
10 - 12 chicken thighs
200 g chorizo, skinless, chopped
3 mixed peppers, cut into strips
1 onion, finely chopped
6 cloves of garlic, crushed
2 tsp smoked paprika, 1 tbsp tomato puree, 1 tbsp oregano, 1 tbsp thyme, 1 Knorr chicken bouillon cube, 1 tin of tomatoes (800g each) (or fresh ripe tomatoes). Place all ingredients in the removable bowl of the Crock-Pot. Place the lid on and cook the ingredients on High for 4 hours or on Low for 5 - 6 hours, until the meat is tender.
Delicious with crunchy bort or a crunchy green salad.
Thai style beef ribs - 4 servings
5 cm ginger, grated, 50 g coriander
1 red onion, finely chopped, 3 garlic cloves, crushed, 1 tablespoon brown sugar, 1 tablespoon vegetable oil, 4 ribs, 1 tablespoon soy sauce, 50ml oyster sauce, 1 chicken stock cube, 250ml water, 3 star anise, 2 tablespoons rice wine vinegar
Mix the ginger, coriander stalks, onion, garlic and sugar until a paste is obtained. Heat the oil in the bowl and fry the ribs. The ribs are removed. Lightly fry the pasta for 2 minutes. Add the ribs and the rest of the ingredients, except for the vinegar. Put the lid on and cook the ingredients on high heat for 4 - 6 h or on low heat for 6 - 8 h, until the meat is tender. Remove the meat and cook the sauce with a splash of vinegar until reduced. It is served with salad.
