Tea or tea leaves never come into contact with milk during the production of Original Jin Xuan Milk Oolong. The creamy aroma comes exclusively from the natural ingredients of the tea leaf.
High altitude culture and traditional processing are important to Milk Oolong tea
A decisive factor for the quality of Milk Oolong tea is the cultivation altitude. The landscape of Taiwan is characterized by high mountains. The higher the cultivation, the more aromatic the tea. The tea plant produces many of the substances we perceive as aromatic as protection against adverse environmental influences. Tea grown at an altitude of 1,000 meters or more is called mountain tea.
Another important factor for the milky flavor of Jin Xuan Oolong tea is the traditional roasting and oxidation process. If the tea leaves are left in the air after harvesting, the ingredients in the tea leaves react with the oxygen in the air. The tea leaves become darker and more aromatic. This can lead to much more complex flavors than with green or black tea.
In milk oolong teas, oxidation is stopped 1 - 2 days after harvest. To stop oxidation, the tea leaves are fried in a hot wok for a few minutes. This partially caramelizes the sugars contained in the tea leaves. This traditional process enhances the creamy flavor of milk oolong tea.
The milky and creamy taste of natural milk oolong tea tends to be mild and harmonious. A natural milk oolong develops its aroma and taste only during infusion. Unlike flavored milk oolong teas, Jin Xuan milk oolong has a more subtle flavor but offers 100% natural pleasure.
Oolong teas originally come from Taiwan and China. The peculiarity of Oolong tea is that it is semi-oxidized. Oxidation causes the tea leaves to turn brown to black and the flavor changes. Green tea and black tea are both at one extreme of this spectrum. In green tea, oxidation is stopped immediately after harvesting. Black tea is completely oxidized. The art of oolong tea is finding balance.
In terms of flavor, it bridges the gap between green and black tea and combines both the freshness of green tea and the flavors of black tea. This makes oolong tea undeniably the most flavorful type of tea. With oolong tea, you can expect a burst of flavor.
Preparation of Oolong tea:
When brewing Oolong tea, it is important to choose a teapot that is large enough to allow the mostly rolled leaves to unfold properly. Oolong tea can be prepared very well in a gaiwan or a Chinese teapot, for example made of Yixing clay. Oolong tea is also ideal for the Chinese tea ceremony with a Gong Fu Cha ceremony set.
For the first infusion, you should also choose a slightly longer infusion time to allow the tea leaves to develop. A water temperature of 80 - 90 °C and a brewing time of 2.5 - 3 minutes are best for the first infusion. All subsequent infusions can then be prepared with a preparation time of 2 minutes.
