Compared to table sugar, erythritol has a sweetening power of 70%, which means you need a little more to get the same sweetness as with sugar in your recipes. Good to know: Erythritol is a natural substance that we have all consumed at some point, as various fruits and mushrooms contain this compound, which can also be found in fermented foods. By using erythritol, the teeth are less affected and the blood sugar level does not increase. Other significant advantages of erythritol are that it is not further metabolized in the human body and has no calories. Although erythritol is a carbohydrate, it does not behave as such, meaning it is not converted into energy in the human body. Therefore, erythritol cannot be taken into account when calculating carbohydrates. Incidentally, the warning that excessive consumption of erythritol has a laxative effect comes from an EU regulation on food additives.
