The difference between xylitol and erythritol: Xylitol provides 1:1 sweetening power compared to conventional sugar, while erythritol only provides 70% sweetening power. This means that more erythritol than sugar must be used in baking, which means proportionally more wet ingredients must be added to achieve the same result. Xylitol is therefore more suitable for baking as it does not complicate recipes
PERFECT FOR BAKING: Erythritol tends to form crystals when a dough cools, which is characterized by crunchiness between the teeth. Therefore, our xylitol is more suitable for the production of sponge dough. You can even make yeast doughs with our xylitol. However, they take a little longer because the yeasts feed on alternative sources of carbohydrates (flour)
CALORIES: Xylitol has approx. 40% fewer calories than household sugar, only a fraction of which can be used by the human metabolism.
