The professional ingredient for a typical sourdough rye bread. Liquid rye is ideal for making the perfect rye bread. Rye naturally contains more starch-degrading enzymes than wheat and is therefore only suitable for baking to a limited extent. Therefore, for optimal baking properties, a sourdough should be used to inhibit the enzymes, to produce the typical aromatic taste and to make the bread keep longer. Sourdough also improves the digestibility and shelf life of bread. Our 70g bag is enough for one rye bread (500g flour) with a high rye content. If the rye content is low (50% or less), only ½ bag can be used if desired. With the typical sour taste of sourdough and completely natural preparation, RUF sourdough liquid with added yeast is ready for baking immediately.

Instructions for use

Preparation: For bread with a high content of rye or wholemeal flour (more than 50%), use one sachet of RUF Sourdough liquid per 500g of flour. If the proportion of rye or wholemeal flour is low (50% or less), one sachet of RUF Sourdough Liquid is sufficient for 1000g of flour.
