Tie Guan Yin is the classic Chinese Oolong tea
Tie Guan Yin Oolong is one of the most popular Chinese teas. Consequently, there are many legends and myths about the origin of this tea. Tie Guan Yin is a very aromatic tea. In this slightly oxidized version, with beautiful floral notes, it develops a refined aroma and is also rich in vital substances.
Tie Guan Yin is an Oolong tea that was born from compassion
Tie Guan Yin translates to "Iron Goddess of Compassion". In China, there is a legend of a farmer who always passed by an abandoned temple of this goddess on his way to his fields. He felt sorry that the temple was so dilapidated. Unfortunately, he did not have the financial means to restore it. Disappointed, he lit incense sticks and cleaned the entire temple complex. That same night, the goddess appeared to him in a dream and told him that she had a gift for him in the cave behind the temple. He should take care of it and share it generously with his neighbors, then it will bring joy and prosperity for many generations. The next day, he found a young tea plant in the cave, which he planted in his garden.
After two years, it grew into a big bush and the farmer tasted his first tea. He was delighted by the mild flavor with a slight bitterness and lovely floral notes. He then decided to take even more care of his tea plant. After another two years, he already had 200 tea bushes. Now that he had become rich, he was also able to restore the dilapidated temple. He also shared the seeds from his tea bushes with his neighbors and Tie Guan Yin tea soon became famous.
TEZEN Tie Guan Yin tea originates from the original village of Anxi, which is also described in the legend. It is a high-quality Chinese oolong tea from pesticide-free crops. Handpicked, traditionally roasted and rolled into small balls.
Chinese oolong tea from traditional tea gardens
Oolong teas are the link between black and green tea
Oolong teas originally come from Taiwan and China. The peculiarity of Oolong tea is that it is semi-oxidized. Oxidation causes the tea leaves to turn brown to black and the flavor changes. Green tea and black tea are both at one extreme of this spectrum. In green tea, oxidation is stopped immediately after harvesting. Black tea is completely oxidized. The art of oolong tea is finding balance.
In terms of flavor, it bridges the gap between green and black tea and combines both the freshness of green tea and the flavors of black tea. This makes oolong tea undeniably the most flavorful type of tea. With oolong tea, you can expect a burst of flavor.
Preparation of Oolong tea:
When brewing Oolong tea, it is important to choose a teapot that is large enough to allow the mostly rolled leaves to unfold properly. Oolong tea can be prepared very well in a gaiwan or a Chinese teapot, for example made of Yixing clay. Oolong tea is also ideal for the Chinese tea ceremony with a Gong Fu Cha ceremony set.
For the first infusion, you should also choose a slightly longer infusion time to allow the tea leaves to develop. A water temperature of 80 - 90 °C and a brewing time of 2.5 - 3 minutes are best for the first infusion. All subsequent infusions can then be prepared with a preparation time of 2 minutes.
